Make breakfast fast and easy and tasty with cinnamon walnut steel cut oats are area ready in 5 minutes. With no sugar, salt or fat, this is a quick and easy healthy start to the day. Steel cut oats freeze well so make up a batch (this recipe serve makes enough for the whole family) freeze in individual size servings if it’s just you in the mornings. Just take it out of the freezer, pop it into a microwave safe bowl, cover, and cook on high for 4-5 minutes. A hot breakfast is ready with no muss, no fuss, no mess, while you are off doing something else.
This recipe is meant to be made ahead and frozen. I usually make a up a batch on the weekend and freeze it for quick breakfasts. When we have such limited time, having a pre-cooked meal without salt is a luxury. They are so hard to find. Most baked goods for the morning – actually most breakfast foods – are full of salt. Baked goods have baking soda and/or baking powder and if you’ve ever tried to make bread without salt you know its unpalatable. Stop off at your local coffee shop and check out the salt content of their breakfast sandwiches. Even a bagel and cream cheese is packed with salt.
I rely on this greatly to keep my sodium intake down because it is so quick in the mornings and doesn’t take too much time to make but too long to make in the mornings.
Cinnamon Walnut Steel Cut Oats
4 c Coconut water or apple juice 1 L
1 c Steel cut oats 250 mL
2 tsp Cinnamon 10 mL
1 tsp Vanilla 5 mL
2 tbsp Chopped walnuts 30 mL
2 tbsp Raisins 30 mL
Milk
Bring coconut water to boil in medium sized pot with a tight fitting lid. Add oats, reduce heat to slow boil. Cover and cook on low for 30 minutes, stirring to check consistency, until it is desired consistency. Remove from heat and cool, covered. Oats will thicken as they cool.
When cool, place in freezer containers with tight lids, label, and freeze up to 3 months.
To serve, place in microwave safe bowl, lightly cover, and heat on high for 4 - 5minutes. Top with walnuts and raisins and milk, if desired.
